Mediterranean Diet
The Mediterranean Diet Program takes place in Siena and Verona and was designed to give students from Armstrong State University and Georgia Southern University the opportunity to study the mediterranean diet in one of the countries where food traditions are rooted deep into its culture. Students have a chance to learn about the Slow Food association and its philosophy: good, clean and fair food. They also visit some typical food producers and wineries in the area, visit an olive oil mill and learn about organic farming. The purpose of the course is to show how the principles of the mediterranean diet influence the way in which food is produced, prepared and consumed in Italy, setting standards for healthy eating. The course includes cooking classes, dinners and visits to local food producers, as well as lecture with experts from the Slow Food Association, Nutrition researchers from the University of Verona and other specialists. This course is a valuable curriculum extension for any undergraduate or graduate nutritional science program.
